All Smoked Up Booking Information

 

If you know you’re going to book a party with us in 2009
and you want a Saturday,
book early to assure the date.

 

~ A non-refundable deposit in the amount of $200.00 is required to book any event.
~ Final payment for all events is required no later than 14 business days prior to the event.
~ Credit card payments can be made on the main page of our website allsmokedup.com. Final payments made by credit card will be invoiced with an additional 3% service charge.
~ All bookings are first come first serve.

We need all of the following information to write you a quote:
• Full name & address of person responsible for booking & billing.
• Address of the event
• Date of the event
• Time of appetizer and/ or dinner service
• Estimated guest count including children! (75 minimum required, 50 on weekdays)
• Menu selections
• Final guest count is due 7 days prior to the event, no contract adjustments will be made after this date for no shows. If the guest count increases above the guaranteed number (children included) there will be an additional charge based on the per person price of the menu you selected.
• Additional staffing may be necessary to accommodate an increase in guest count.

Note: Please be very specific with your menu selections; use the menu page for all items available. If you’re looking for a pig roast and all you want is the pig, specify that. If you want us to provide side dishes we need to know exactly what sides you want!

We get many emails like; how much is a pig roast for 60 people? This is not enough information and if your party is on a weekend you don’t meet the minimum guest count so please be specific.

All quotes will cover the following:
• Food (1hr appetizer service and 1.5 hr dinner service)
• Cook staff adequate for the size of the job.
• Cooking fuels
• Service platters, baskets & bowls
• Serving utensils
• Buffet set-up, service & breakdown
• Trash cleanup of our area only
• Travel expenses at $1.00 per mile roundtrip from Danbury, CT with a $75.00 mandatory minimum charge.
• On some jobs with large menus and lots of preparation a walk in cooler as well as additional staff will be required. The cost of this cooler and/ or additional staff will depend on the time involved and/ or the location of the job and will be itemized on the final proposal.
• Parties booked early will be subject to reasonable food price increases later in the season.
• A 20% service charge will be added to all final invoices as will state sales tax.
Overtime – overtime will be billed for any delays beyond the scheduled time of dinner service at a rate of $50.00 per hour per staff person.

Note: Depending on the menu we will be onsite 4 to 6 hrs prior to the event to finish prep, setup and cook. If you’re having a pig roast we will arrive 2 hrs prior to your guests to setup. Carving will commence as guests begin to arrive and dinner will be served 1.5 hrs after guests arrive. All times are subject to change based on weather conditions and the timely arrival of guests.

***What you are required to provide for us: ***
• Adequate room to maneuver and flat ground for our 27’ catering trailer. If you don’t have the room you must let us know immediately so that we can plan to use our smaller cooker.
• A 15’x20’ cook tent without center poles on either of the 15’ sides, this tent is mandatory!
• If your job requires chafing dishes for any menu items they will need to be included on your rental list with sternos.
• We will need a minimum of (5) 6’ buffet tables with linens of your choice.
• (2) large trash barrels & bags, trash disposal is your responsibility
• You must provide all disposables, plates, forks, knives, napkins, etc.
• We will need a source for potable water; all of our service equipment will be washed before we leave.
• We will need access to 20 amp power if a walk in cooler is required.
• We will need restroom facilities for the staff.
• For any other service needs additional staff will be your responsibility, we can provide whatever assistance you need.

We do not provide drinks or dessert.

*Only one event is booked for any calendar date. To assure outstanding service at every level I personally cater every party.*
